הסדנה הבינלאומית נערכת מדי שנה בחורף או באביב, בשיתוף פעולה של מרכז אדלשטיין באוניברסיטה העברית, מכון ון ליר בירושלים ומכון כהן. חוקרים מישראל ומהעולם נפגשים למשך ארבעה ימים (יומיים בתל אביב ויומיים בירושלים), להציג את מחקריהם ולדון ברעיונות הנוגעים לנושא מרכזי אחד שנבחר לעמוד במוקד הסדנה באותה שנה. האינטראקציה הדינמית שנוצרת בסדנאות הפכה אותן לאירוע מצליח ביותר. חוקרים צעירים הניצבים בתחילת הקריירה שלהם מוזמנים גם הם להציג את מחקריהם ומקבלים הזדמנות להתחכך בחוקרים המובילים בתחום. תלמידים מכל האוניברסיטאות והמחלקות מוזמנים להקשיב ולהשתתף בדיונים.
הנושאים להם הוקדשו הסדנאות בשנים קודמות משקפים את הטווח הרחב של של תחומי העניין האינטלקטואלי המעסיקים את חוקרי המכון, כפי שמדגימה הרשימה שלהלן. בחלק מהשנים, כמה מן ההרצאות הבולטות שניתנו בסדנה זכו לפיתוח נוסף ונאספו בגליון מיוחד של Science in Context, כתב העת המדעי שעורך מכון כהן (גליונות מיוחדים אלה מצוינים ברשימה שלהלן):
